for the cakes.
100g Lurpak lightest.
100g Caster Sugar.
60g self-raising flour, sifted.
2 medium – large eggs.
40g Cadbury highlights
for the butter cream
50g clover light
50g icing sugar
1 tsp of cocoa powder, sifted.

Method
Preheat the oven to 180 degrees C.
Mix the weighed flour and cocoa powder together in a small bowl until combined. Next, get a large mixing bowl and sift the flour and cocoa into the bowl.
Once the flour and cocoa are in, add the Lurpak, sugar and eggs to the bowl. Mix until thoroughly combined.
Once the mixture is ready, use a tea spoon to drop a little mixture into each muffin case. Aim to fill the muffin case just over halfway.
Place the cup cakes in your preheated oven for 10 minutes.
To make the icing mix the butter on its own until smooth and creamy.
Then sift the icing sugar into the bowl and mix. You need to mix this for quite a while as you need a smooth mousse like consistency.  Next, sift in the cocoa powder and whisk again. If adding the egg yolk, whisk it in once the cocoa powder is fully combined.
Check the cakes are cool and then use a syringe to apply the icing. Place a Malteser on each cake and done.
